Suzie’s Salsa
For us, a jar of this fresh, flavorful salsa in the fridge is like money in the bank!
Our perfect salsa is:
1) made with fresh ingredients harvested from our own garden
2) easy-peasy (as simple as popping things in the blender and hitting go)
3) addictive—like, go through an entire bag of tortilla chips addictive
4) customizable (some of us like lots of cilantro, okay?!)
Suzie’s been making versions of this salsa for years now, and it’s always a crowd-pleaser. Versatile enough to serve with tacos or your favorite Mexican dish, but yummy enough to eat with a simple chip, you’ve got to give this a try!
Ingredients:
2 14-oz cans of diced tomatoes
1 small white onion, diced
1 Anaheim pepper
1 serrano pepper
1 medium sized, fresh, bell pepper (any color)
1 fresh jalapeno
(keep all the guts and insides if you want heat!)1/2 bunch fresh cilantro
1/2 teaspoon cumin
2 teaspoons fresh minced garlic
(or 1 teaspoon dried)1 teaspoon salt
1/4 teaspoon red cayenne pepper
1 teaspoon sugar
1 lime, squeezed
Instructions:
Add all ingredients into blender and pulse until slightly chunky (or to your desired texture).
Adjust with more salt, if needed
Keep refrigerated for up to two weeks… if it lasts that long.
